Anyone Can Bake
1 cup self raising flour
1 cup of rice milk
2 tsp of sugar
½ tsp of baking soda
pinch of salt
finely grated rind of ½ lemon
3 tsp melted butter
1 cup currants or blueberries
Mix all the ingredients except the butter and the berries to make a smooth batter (if you prefer to, use a food processor.)
Beat in the butter and berries.
Lightly grease a frypan and cook a ladleful of mixture at a time over a medium heat, tilting the pan to spread the batter evenly into a large pancake.
As bubbles form, turn to cook the other side.
Cook until it turns golden brown and fully cooked through.Makes 7-8 large pancakes.
